What’s a good dinner meal to cook for a newbie chef?
My experience:
Scrambled eggs
Omelette
1 coffee cake (last week)
I want something that involves something (not like boiling noodles) but doesn’t need an expert.

I’ve been making this for years, and always receive rave reviews (also a family favorite). It’s easy, few ingredients needed, presentation is very nice, and it is easily doubled, etc. Always serve with a nice garden salad, and of course nice crusty bread to soak-up the sauce. From the "Creme de Colorado Cookbook", which is one of my favorites!
CHICKEN SCAMPI
1/2 cup butter
1/4 cup olive oil
1/4 cup finely chopped green onions
1 tablespoon minced garlic
Juice of 1 lemon (Note: don’t use a large one or sauce will be too thin)
2 lbs. chicken breasts (boneless/skinless), cut into 1/2 in. pieces
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup minced fresh parsley
1 tomato, chopped (Note: I use 2, and squeeze most juice out)
Buttered noodles or cooked rice (Note: we prefer medium egg noodles)
In skillet, heat together butter and olive oil, and saute green onions and garlic. Add lemon juice, chicken, salt, pepper, and parsley. Continue cooking, stirring constantly, for 5-8 minutes, or until chicken is done. Add tomatoes and heat through. Serve over noodles or rice. (4-6 servings.)
