All previous answers are correct .The only in-site I can add is that there is a new restaurant in our area that is so good .But it is set up like a fast food place.I asked the owner why he did not do a full sit down restaurant ? His answer was "I love people if I had a kitchen I would be stuck there and miss conversations like this".Just something to think about. Good luck with whatever you choose.
It usually works that way. The work load is 16 to 18 hours every day for 6 or 7 days each week. No vacations.
Without a doubt, know how many owners of these are in Manhattan ? Lots. Look at Gordon Ramsey, he owns from london to manhattan.

Not only is it possible, but it happens all the time. It’s legal. And very difficult. Most chef/owners have an assistant chef to help him in the kitchen. Mainly because being an owner AND a chef requires more than just cooking.
